Recipe - Monks Jump Over The Wall

Today, I'm going to post a Recipe Soup, Monks Jump Over the Wall (Fatt Tiew Cheong in Cantonese).

Ingredients


Shark Fin (soaked) - "Yue Chi" ---------------------1

Sea Cucumber (soaked) "Hoi Sam" ------------------1

Fish Maw (soaked) "Yue Pue" ----------------------1

Gas Bladder (soaked) "Far Kau"---------------------1

American Wild Ginseng -----------------------------1g

Japanese Dried Scallop -----------------------------1

Wild Bamboo Fungus : Chook Sang" ---------------2 sections

Chicken -------------------------------------------2 pcs

Water --------------------------------------------100 ml



Seasonings

Salt -------------------------------------------------1/4 tsp


Method

1. Soak shark fin, sea cucumber & fish maw in water till soft. Cut American wild Ginseng into slices.
Tips : In the soaking process, the pot must be free of rice or oil. Otherwise sea cucumber or fish maw will disintegrate.

2. Cut Sea Cucumber & Fish Maw into pieces, rinse & set aside.

3. Rinse chicken & scald in boiling water. Remove & rinse with water

4. Soak Gas Bladder & Wild Bamboo Fungus in water till soft, rinse & set aside

5. Put American Wild Ginseng, Scallop & other Ingredients into stewing pot, stew for 4 hours.

6. Add in 1/4 teaspoon of salt or add to taste, serve.

Functions : Relaxes the muscles, promotes blood circulation & delays the process of ageing.

2. Scallop helps to lower blood pressure, enhances stomach function, relieves dizziness & thirst.

The hoi sum gotta be soaked a few days in order for it to soften, doesn't it?

yes. If you're buy those dry "hoi sum", you soak first for a few days ( I normally put inside the fridge but I change the water daily). Then take out, boil some water & put your "hoi sum" inside the hot water (for a few mins). The cut open the "hoi sum" stomach to get rid all the stuffs inside.
Then put it back inside your container & soak again. You can actually see your getting bigger & bigger. Soak another 2-3 days or when you wanted to eat. (remember to change the water daily). Understand?
